Hello lovelies ! I’m a bit out of inspo for recipes right now. But I think I need to also share easy, everyday recipes like this one. I had the pork in my freezer, no idea of what to cook for diner and next to nothing in the fridge. I thawed it and cooked it the next day.
It’s the kind of dish that gets better every time you reheat it. I did it in a very big pot and there was too much water, so the first time it was a bit insipid. But damn the next time it was god damn good ! The potatoes had sucked all the juices of the meat and were so flavourful !
I’m going through a lot of medical appointments right now, exams and tests every week. So it was the perfect time for something hearty and comforting like this. No need to cook everyday with a big pot of this in the fridge. We ate it 2 days.
By the way I’m still processing all that’s going on in my life but I still want to make you some chronic illness and disability content. Stay tuned for this, I’ll try to make it light and relatable.
Enough rambling ! Let’s jump into the recipe !
I didn’t weight anything this time. Yes I know. Stupid. But here are approximation.
– 600g of pork ( salted belly or shoulder butt)
– 500g of dried green lentils
– 4 carrots
– 2 celeriac branches
– 6/7 potatoes
– bay leaves, thyme, rosemary, salt, pepper
– chicken stock (time to use your good chicken broth you made with this blog post)
We’ll make all in one pot so you’ll need to had things at the right timing.
Start by putting your whole meat in a big pot. Cover with water.
Bring to boil and add stock, bay leaves, rosemary and thyme. Let simmer on low heat for an hour.
While the meat is cooking, prepare the veggies.
Peel and cut in small pieces your carrots and celeriac. Then, peel and cut in bigger chunks your potatoes.
When the first hour is done, add your lentils, carrots and celeriac to the mix. Let cook again for 20min.
Take out the meat and cut it out in chunks. Put it back in the pot.
Then add the potatoes and let cook again for 20 to 30min.
Check if everything is well cooked and serve. Add big sourdough bread slices on the side.
